French Onion Soup

This a great easy recipe to cook in your Waterless stainless steel cookware.

Ingredients:

8 onions (Vidalia)

6 garlic cloves whole

1 TBS butter

1 TBS oil

3 14.5 oz containers of chicken broth

1/2 cup dry red wine

6 slices of French bread (baguette) 1/4″ thinck

1 cup Monterey Jack or better mozzarella or Swiss grated

Carmelize onions and garlic in butter and oil in a 3 quart stainless steel saucepan from your stainless steel waterless cookware set over medium heat until transparent and creamy,about 30 minutes. Add Chicken brothand the red wine. Simmer covered an additional 30 minutes. Meanwhile toast the French bread in oven until light brown and dry. Ladle soup into broil safe bowls. Place one slice of bread on top an cover with the grated cheese. Broil until the cheese melts and begins to brown. Enjoy!

Lemon Sesame Chicken

This is a great recipe for your waterless cookware frying pans.

Ingredients:

4 skinless chicken breasts

1 fresh lemon

1 TBS sesame seeds

1 tsp oregano

Preheat a large stainless steel frying pan from your waterless cookware set on medium-high heat. Then place the skinless chicken breasts on the pan and reduce heat to medium. Cover the pan and leave the vent open or leave the cover slightly ajar. Cook 10 minutes on one side until browned and turn the chicken over with your spatula from your kitchen utensils. Cover and cook for another 5-7 minutes or until done.

Put the chicken breasts on a serving dish. Then squeeze the lemon over the chicken and sprinkle if with the sesame seeds and oregano. Serve immediately. Great with lightly cooked vegetables and rice pilaf. Enjoy!

Beef and Noodles

Here’s a nice recipe for Better Health Cookbook to use with your waterless cookware.

Ingredients:

1 pound lean round steak 1/2″ thick

2 cups fresh sliced mushrooms

1/2 cup celery, chopped

3 green onions chopped

1 clove garlic

2 8 ounce cans no salt added tomato sauce

1/3 or so cup dry white wine

1 TBS lemon juice

1 bay leaf

1/2 tsp dried whole oregano

1/4 tsp dried whole rosemary, crushed

1/8 tsp ground pepper

3 cups hot, cooked, unsaletd medium egg noodles

Trim excess fat from steak; cut meat into 1″ pieces. Preheat 10″chef pan or large waterless cookware frying pan over medium high heat. Add steak and brown. Remove meat, reduce heat to medium-low and add mushrooms, celery, green onions, and garlic. Sauté until vegetables are tender. Add meat, tomato sauce and the next 6 ingredients; stir well. Cover and reduce heat to low and simmer 45 minutes or until meat is tender. Remove and discard bay leaf and serve over hot noodles.

Sesame Chicken Wings

This is a great appetizer or finger food for your gatherings.

Ingredients:

12 Chicken wings

1TBS lightly salted black beans

1TBS water

2 cloves garlic minced or crushed

2 slices fresh ginger minced finely

3 TBS low sodium soy sauce

1 1/2 TBS dry sherry or rice wine

1/4 tsp black pepper

1 TBS sesame seeds

1 green onion chopped finely

Cut and discard the wing tips with a sharp cutlery knife from your cutlery set. In a small bowl crush the beans and add the water and set aside. Heat a medium stainless steel waterless skillet over medium-high heat; add chicken wings, garlic and ginger and lightly brown the chicken. Then add soy sauce and sherry and stir for 30 seconds. Add the soaked black beans and pepper. Cover the Waterless cookware frying pan and reduce heat to medium or low and simmer 8-10 minutes. Uncover and increase heat to medium high, while stirring the wings occassionally and cook until liquid is almost evaporated and wings are glazed with the sauce. Remove from heat and sprinkle wings with the sesame seeds and stir to coat. Garnish with the green onion and serve. Enjoy! (adapted from Better Health Cookbook)

Healthy Cooking, Exercise and Good Health

Most of my blogs are relative to use of cooking utensils, recipes and often with a twist of healthy life, suggestions or fun etiquettes goodies. A comment recently posted reminded me of something.

I feel healthy cooking is one of the best ways to help you reach your goal of good health. Eating lots of vegetables, eat lean meats. Unless there is severely high cholesterol, lean beef, and other red meats are certainly acceptable along with fish and poultry in a good mix. and limiting starchy foods. I feel that that the waterless greaseless cooking techniques with waterless cookware, help you reach your goals. of course along with sensible exercise.

Now the post reminded me to mention that always have a good physical prior to starting an exercise program. This is especially true if you have not been exercising over the last 6 months or so. Also especially true for an individual with pre existing high blood pressure, high cholesterol, heart disease, adult onset diabetes etc. Your physician can help you start on a safe effective exercise program to begin with and tell you how to gradually progress on the program safely. Walking and and cycling in light exercise programs generally are best to start. Eventually the program may be able to progress to jogging, aerobics classes and other activities in time.

So again cooking healthy with waterless low fat techniques like in waterless cookware methods, exercise programs cleared by your doctor and eating sensible amounts of food along with lots of water all contribute to better health.

Your Stainless Steel Waterless Cookware will occasionally get stains on the cooking surface from cooking starchy foods or searing meats. Also a bluish stain can occur on the heating surface from overheating the stainless steel pots.

These stains and discolorations are easily removed using a non abrasive stainless steel cleaner.  Make a paste with the cleaner and water then apply the paste with a cloth or paper towel, rubbing it well into the surfaces of the stainless steel cookware and then rinsing with water and drying.

Cooking steaks on the Stainless Steel Waterless Cookware sets is healthy and fast. Cooking on Stainless Steel requires no additional oil.

Just trim excess fat, preheat the pan om medium until water droplets jump off of the pan. Then place the steak on pan and press down. It will stick temporarily while braising and then will release. Don’t try to flip unti it’s ready to turn. Check by lifting up an edge(generally 4-5 minutes)and when ready the meat releases itself. Then flip it and cook to your preferrence.

On thick cuts or roasts you would cook another 3-4 minutes then turn on low and cover. Cooking for 30-40 minutes for full roasts. Have fun with it.

Caring for your Waterless Cookware

With Waterless cookware as with all Stainless Steel Cookware you should wash it after each use with warm soapy water and scrub with a dish cloth or nylon net scrubber. Then rinse with warm tap water thoroughly and dry. Never use abrasive, metal scrub pads as these will scratch the surfaces.

You can also always use a dishwasher as well. Doing it soon or soaking first for a while in water if anything burnt or stuck to bottom,  then washing it will help to avoid pitting from salt if it is undissolved or condenses on the bottom of the pan.

The bright like new shine should last a long time with caring for your Stainless Steel Waterless Cookware.
