Use the proper knife
When you are carving or cutting anything always use the right knife for the job. And make certain it is sharp. There is nothing more dangerous and more likely to do a bad job than a dull knife.
When you are cutting vegetables use the French Cutlery knife or a cleaver. Sharpen it each time you use it and place tip of knife on the cutting board and rock your wrist down in controlled cuts. Carefully advance the vegetable under the knife as you rock the knife down for nicely even thin slices, and if you want to chop in smaller pieces do same cutting motion but move blade over the spread out slices of vegetables. The size of the pieces can be any size you want. This technique is fast safe and controlled.
